Garam masala, which translates to "warm spice blend" in Hindi, is a versatile and aromatic spice blend commonly used in Indian cuisine. Unlike biryani masala, it generally contains some heat due to the inclusion of black peppercorns or red chili powder. It adds depth and complexity to various dishes, from curries and stews to soups and lentil dishes.

Instructions:

  1. Dry roast the coriander seeds, cumin seeds, peppercorns, cardamoms, and cinnamon stick in a pan over low heat until fragrant and slightly browned.

  2. Grind the roasted spices with the cloves and red chili powder (if using) into a fine powder.

  3. Store the masala in an airtight container in a cool, dark place.
